The HDMI and 3.5mm jacks are not showing up in snakeoil settings, only my usb dac when I plug that in.
I only ask as I may get a hdmi-i2s converter to try out i2s.

That should be fine. The kernel the old installer ISO (1.2 and before) do not include the HDA driver (on board audio), reason why it's not showing up.
Any HDMI-i2s converter you get is likely going to require a new Kernel (I've yet to start work on this). The only device I am aware of is the Pink Faun, and I'm not sure if there's Linux support on this card even today. Would suggest you check with the retailer and make sure it has proper Linux support before you purchase.
Yeah pink faun is so overpriced and still capped at pcm.
I think money would be better spent buying a rpi4 with pi2aes?

It's all system dependent.. FWIW With redbook music I'm getting better audio quality via S/PDIF compared to USB 2.0.
I2S in theory is better, but then in my setupĀ USB (balanced) when compared to S/PDIF (Unbalanced). At the end of the day, it all brings down to personal and music preference.
